What makes these cookies so special are the ingredients and flavor combinations make from scratch in Fairway’s kosher bakery, European style butter (higher butterfat content than American butter which results in a richer flavor and more tender crumb); Valhrona cocoa, hand chopped pecans and naturally harvested sea salt are among the top-of- the- line ingredients used.
The dulce de leche cookie sandwiches, which take four to six hours to cook, are inspired by alfajores, a sandwich cookie popular in Argentina. The cookie incorporates the milk caramel flavor into the treat itself not just the filling. The dulce de leche takes a full day to make it –six hours to cook and time to cool and set overnight.
Natural, unadulterated sea salt is used to offset the intense Valhrona chocolate in the chocolate sea salt cookies. The raspberry poppy seed cookies are inspired by Eastern European Jewish cookies that married poppy seeds with rich butter dough and sweet dried fruits.
